The Book titled Global Perspective of Food Science and Technology discusses the principles of food science and technology comprehensively based on core competencies that must be mastered by students studying food science and technology or other relevant fields. The discussion in each chapter is a description of the scope of studies in the field of food science and technology for food technology education recommended by PATPI and the Institute of Food Technologists (IFT). The basic knowledge which is required as well as the latest developments in food science and technology, including the challenges and opportunities in the Industrial Revolution 4.0 era are also discussed.
The book is written by experts from various universities in Indonesia and practitioners in food science and technology sectors in accordance with their respective fields, thus, the study presented contains credible information as a reference for students, lecturers, practitioners and community at large who want to explore food science and technology.
